This pasteurized cow's milk is rubbed with a brine made from Quebec beer. The cheese is matured for 6 to 8 weeks, during which weekly care includes frequent turning and washing. It has an orange crust as well as an ivory paste with small openings. Its texture is supple and melting.

FLAVOR: This cheese offers slightly fruity notes, but its delicacy does not conflict with the delicious and clean taste of the cheese.

HOW TO TASTE IT: It is a perfect product on a platter and a superb addition to your favourite recipes because it is also excellent when melted. It goes well with a beer with pronounced bitterness or a Pinot Grigio.
