Brasserie Les Acolytes - Saison is Coming
It's the house style of the Acolytes: between a saison and a Farmhouse Ale, it's a light and wildly hoppy blonde. Full of aromas of exotic fruits and vegetables, it is slightly bitter and very digestible!
Process of brewing: Mashing operation ratio low for a light beer.
Slow and controlled boil for a full starch extraction.
A few extraction of non-fermentable sugars to obtain dry beer.
Very few added sugar, a single dose allowing the regularity of the final alcohol degree. Two weeks fermentation in a 16°C room.
Cold hopping during fermentation to accentuate the floral and hoppy aromatic. Bottling with 5.5 g/L of sugar for a second fermentation in the bottle.
Nice light gold color, a light hoppy ale, aromas of flowers and herbs.
