LactAçores was created in 2004 to protect and promote dairy products from the archipelago of Azores focusing only on the products made by co-ops from the islands. The mild maritime climate of the island of São Miguel provides an ideal environment to breed and herd cows. The eponymous cheese is made from pasteurized milk and ages for at least 9 months.
The name, pronounced Sow-Me-gal, is known as "black-skinned cheese" by the locals Its paste is semi-firm and has a honey-yellow hue and is dotted with openings. A strong and aromatic cheese with bold taste and aromas.
It begins with a slightly sweet taste but ends with a subtle nutty and spicy flavour that lingers pleasantly on the palate.
