With an ivory paste veined with blue, a floral natural crust, a melting texture, a full-bodied taste, the flavour of Bleu des Causses is very typical, tasty but without bitterness. Pleasant spicy. Its taste is similar but a little milder than its famous cousin, Roquefort.
