To make an orange wine, you first take white grapes, mash them up, and then put them in a large vessel (often cement or ceramic). Then, you typically leave the fermenting grapes alone for four days to sometimes over a year with the skins and seeds still attached.

This is a natural process that uses little to no additives, sometimes not even yeast. Because of all this, they taste very different from regular white wines and have a sour taste and nuttiness from oxidation.
These wines have been described as robust and bold, with honeyed aromas of jackfruit (a fleshy tropical fruit), hazelnut, brazil nut, bruised apple, wood varnish, linseed oil, juniper, sourdough, and dried orange rind.
On the palate, they’re big, dry, and even have tannin like a red wine with a sourness similar to fruit beer. Often Orange wines are so intense that you might want to make sure you’re sitting down when you first taste them.

]]>In The Speakcheasy our wine and cheese tasting lounge we make to die for Fondue! We are sharing the recipe. Everyone loves to curl up by the fire with a full bodied glass of red or a peaty dram of whisky to pair with gooey rich cheese.
There are many options of great food to dip in your Fondue. Classics are: Crusty bread, potatoes, broccoli, mushrooms, gherkins, apples. Non traditional dippers: Bell peppers, roasted Brussel sprouts, asparagus.
Now everyone also has their own opinion about rules to making fondue but really its melted cheese and I know you can do it!
Ok get your ingredients ready:
1 Bottle dry white wine
300gr Emmentaler
300gr Gruyere
100gr Aged Cheddar
1 tablespoon of Kirsch
Pinch of Nutmeg
2 Tablespoons of Cornstarch
Garlic
Assorted dippers
Let's Melt Some CHEESE:
Rub the bottom of your pan with the garlic clove
Add white wine (pour yourself a glass too!)
Stir in cornstarch slowly
Add your shredded cheese slowly
Add nutmeg
Sprinkle with Salt and Pepper

]]>I love to BBQ but sometimes choosing what to BBQ can be a bit limited. Halloumi is a fantastic way to jazz up your burgers, salads and more!
So let's start with what is Halloumi?
Traditionally prepared from goat's and/or sheep's milk on the Eastern Mediterranean island of Cyprus, Halloumi is a white, layered cheese, similar to mozzarella. It is a semihard, unripened, and brined cheese with a slightly spongy texture. Its flavor is tangy and salty, and it has no rind.
Halloumi is sometimes made from cow's milk. Which made in Canada as well!
It has a high melting point so it's perfect to bread then fry in a bit of oil on its own!
For the BBQ: Toss in oil and your favourite spices then grill on the BBQ until you see light grill lines on both sides.
Tasting Notes: On it's own it's quite bland and salty but fry or grill and it's sweet savoury deliciousness!
